Soak your cedar plank for at least two hours prior to cooking. In the picture the cedar plank is soaking in one part water and two parts Chardonnay. A water-filled ramekin is used as a weight to keep the board submerged.

REMEMBER!
Never use anything but food-grade cedar for cooking. Check with your local meat or fish vendor or the neighborhood kitchen specialty store.
